By now we have all heard about the amazing health benefits of Chinese green tea. Long used medicinally in China, it has become increasingly popular around the world. Is there a difference between tea grown in China, and tea from other places? What are the origins of tea, and how did it become so popular?

How Tea Begin?

Tea is thought to have originated in China at least 2,000 years ago. Because of the time that has passed since then, mystery surrounds the actual beginning of tea-drinking. A legend says that an early Buddhist Master discovered tea. Another legend has it that the Chinese agricultural god Shenong invented it by chewing the leaves and spitting them into a cup of hot water, in order to test the toxicity of the leaves. Still another variation of the same legend says that one day a tea leaf blew into his cup, he looked at, then sipped it, and the result was tea!

China versus India

Biologists have determined that there are two slightly different tea plants. One is native to India, Burma, and the Yunan province of China. The other is found in eastern and southeastern China. The plants are similar enough that they surely have a common ancestor, and the tea they produce is the same. Tea was cultivated on a massive scale under British rule. Mechanization was introduced, and tea was grown and handled with an eye toward export. From this time on, tea traveled to the corners of the world.

The purported health benefits of this beverage are almost endless. High levels of antioxidants have led to studies showing that green tea may be a cancer fighter of the first magnitude. Tea is becoming almost as popular in the west as it has been for centuries in the east. Chinese white tea, green tea, black tea and oolong are all widely available everywhere. Just what is the difference among all these teas?

Tea Plant

All tea comes from the same plant, Camellia Senensis. The type of tea we end up with depends on a few factors. First, the time of picking. Second, the combination of buds and leaves. And third, the processing of the tea once it is picked. It is this last variable that determines the basic type of tea.

Black tea is fermented after picking. Green tea is not fermented at all, and oolong is somewhere in the middle. Chinese white tea is closer to green tea. It is considered slightly fermented. It is picked while there is still fine silvery white hair on the buds, which gives us the name.

Different types

High quality Chinese white tea is picked early in the spring, when the buds are just opening. Different types have different proportions of leaves to buds. The higher the quantity of buds, the more expensive and rare the tea will be.

Silver Needles, one of the most valuable of all white teas, is made entirely of buds. This is why it is so much more rare than the others. Great care must be taken when picking and storing this tea, so that the leaves and buds will not become bruised or oxidized.

Flavor

It has a delicate, sweet flavor, very different from the sharp grassy taste of green tea. Because it is unfermented, you get the full flavor of the tea bud, completely unaffected by processing.

Health Benefits

Studies have found white tea antioxidants to be very powerful. These powerful compounds help fight cancer and high blood pressure. They reduce the signs of aging, and aid in weight loss. They also help strengthen the immune system.

Of course, this rare healthful tea comes with a price! This tea will cost you more than its more processed cousins. However the flavor and health benefits still make it a cost effective treat.

Most people know oolong tea as the kind they are served in Chinese restaurants. Although this type of tea has long been treasured in Asia, partly due to its weight loss reputation, it is now gaining popularity in the west.

Most people know oolong tea as the kind they are served in Chinese restaurants. Although this type of tea has long been treasured in Asia, partly due to its weight loss reputation, it is now gaining popularity in the west.

Although there are many different types of tea, they all come from the same plant, camellia sinensis. The leaves of the tree are processed in various ways, giving us the many kinds of tea. White, green, oolong and black tea are all from the same plant, but are processed differently. This processing affects the flavor, color, caffeine content and health benefits of the different types of tea.

After oolong tea is hand picked, it is shaken slightly to bruise the leaves, then left out in the sun. It is important to the ultimate flavor of the tea that this is done immediately after it is picked. This begins the drying and fermenting process. It is then roasted, traditionally in a hot wok.

Oolong means black dragon. It comes originally from Fujian Province in China. Today there is both Chinese and Taiwanese. This tea is semi-fermented, somewhere in between green tea, which is unfermented, and black tea, which is fully fermented. It contains caffeine, but slightly less than either black or green tea.

There is a large variety available. Different fermentation times produce different flavors and textures. Some oolong is flat and straight, some is curly, and some is rolled into tight balls. Often jasmine is added for flavoring. Some varieties are grassy and light, others are dark and richer.

The darker variety is best brewed kungfu style. Traditionally a very small clay pot is used. Pure water is boiled and poured over the leaves. Allow to steep for just one minute before serving. It is best taken hot.

This tea contains antioxidants, which are important to good health. While it contains fewer of beneficial compounds such as EGCG than green tea, it has far more of them than does black tea.
